Spring Arugula Salad
|
Ingredients
- 2 handfuls arugula lettuce organic
- 1/2 cup blueberries organic
- 1 whole pear organic
- 1 tbsp pine nuts organic
- 1 cup strawberries organic, chopped
- 1 tbsp sunflower seeds organic
- 2 tbsp olive oil organic
- 4 tbsp lemon juice organic
- 1/8 tsp sea salt

Instructions
*Cooking times may vary.
- Rinse and add the 2 hanfuls of arugula lettuce into a salad bowl.
- Rinse and chop the 1 whole pear and 1 cup of strawberries into bite sized pieces.
- Add the pear, strawberries, 1/2 cup of blueberries, 1 tbsp of pine nuts, and 1 tbsp of sunflower seeds on top of the arugula lettuce. Then, top everything with the 2 tbsp of olive oil, 4 tbsp of lemon juice, and 1/8 tsp of sea salt.
- Mix everything together in the same bowl, and enjoy!
