Quinoa Salad Topped with Green Onion and Carrots

Ingredients
- 1/2 cup dry quinoa organic
- 1 handful baby green lettuce mix organic
- 1 whole carrots organic
- 1 whole green onions organic
- 1/2 cup feta cheese organic
- 1 tbsp olive oil organic
- 1/2 tsp rice vinegar organic
- 1 tsp garlic powder organic
- 1/2 tsp cayenne pepper
- 1/8 tsp sea salt
- 1/2 cups water

Instructions
*Cooking times may vary.
- Place the 1/2 cup of dry quinoa into a cooking pot with 1/2 cup of water and 1 tbsp of olive oil. Bring to a boil, then simmer with a lid for about 7 minutes or until the quinoa is tender.
- Chop the 1 whole green onion and 1 whole carrot into small edible sizes. Add it to the quinoa cooking pot along with the 1/2 cup of feta cheese, 1/2 tsp of cayenne pepper, 1 tsp of garlic powder, and 1/8 tsp of sea salt. Mix all contents together until homogeneous. Allow contents to cool to room temperature.
- Add the 1 handful of baby green lettuce mix to a bowl. Place the quinoa mixture on top along with the 1/2 tsp of rice vinegar.
- Serve at room temperature, and enjoy!
