Quinoa Salad Topped with Green Onion and Carrots

Ingredients
  • 1/2cup dry quinoaorganic
  • 1handful baby green lettuce mixorganic
  • 1whole carrotsorganic
  • 1whole green onionsorganic
  • 1/2cup feta cheeseorganic
  • 1tbsp olive oilorganic
  • 1/2tsp rice vinegarorganic
  • 1tsp garlic powderorganic
  • 1/2tsp cayenne pepper
  • 1/8tsp sea salt
  • 1/2cups water
Instructions
  1. Place the 1/2 cup of dry quinoa into a cooking pot with 1/2 cup of water and 1 tbsp of olive oil. Bring to a boil, then simmer with a lid for about 7 minutes or until the quinoa is tender.
  2. Chop the 1 whole green onion and 1 whole carrot into small edible sizes. Add it to the quinoa cooking pot along with the 1/2 cup of feta cheese, 1/2 tsp of cayenne pepper, 1 tsp of garlic powder, and 1/8 tsp of sea salt. Mix all contents together until homogeneous. Allow contents to cool to room temperature.
  3. Add the 1 handful of baby green lettuce mix to a bowl. Place the quinoa mixture on top along with the 1/2 tsp of rice vinegar.
  4. Serve at room temperature, and enjoy!
