- 1/4 cup cilantro organic, minced
- 1/2 cup cucumber organic, minced
- 1/2 whole jalapeno peppers organic, minced
- 2 cups pineapple organic, minced
- 1/5 whole red onion organic, minced
- 1 tbsp olive oil organic
- 1 tbsp lime juice organic
- 1/2 tsp black pepper
- 1/8 tsp sea salt
*Cooking times may vary.
- Chop the 2 cups of pineapple, 1/2 cup of cucumber, 1/2 whole jalapeno pepper, 1/4 cup of cilantro, and 1/5 whole red onion finely.
- Add everything into a medium sized bowl and mix all ingredients with a spoon.
- Enjoy with vegetables, sprouted whole wheat bread, and organic corn tortillas!
