Fresh Amaranth Pancakes

Ingredients
- 1/4 cup amaranth flour organic
- 1 whole bananas organic
- 1 whole eggs organic
- 2 tbsp soy milk organic
- 2 tbsp honey organic
- 1 tbsp olive oil organic
- 1/8 tsp sea salt

Instructions
*Cooking times may vary.
- Preheat a flat grill pan to a medium heat and add a bit of olive oil to make it non stick.
- Place the 1/4 cup of amaranth flour, 2 tbsp of soy milk, 1 whole banana, 1 tbsp of olive oil, 1 whole egg, and 1/8 tsp of sea salt into a bowl and whisk together until smooth and consistent.
- Use a large soup serving spoon and add one scoop at a time onto the hot grill pan. Cook each side until golden brown. Then, add the 2 tbsp of honey on top for sweetness.
- Serve immediately while hot, and enjoy!
