  1. Place the 1 cob of corn and at least 4 cups of water into a large cooking pot. Heat the corn until the water boils, then remove it from the hot water.
  2. Use a knife and slice off the corn kernels and set aside.
  3. Rinse and slice the 1 whole radish into thin wafers. Mince the 1 whole green onion finely.
  4. Heat the 1 cup of black beans in a cooking pot on a medium heat for 5 minutes and add the 1 tsp of cayenne pepper. Then, warm both sides of the 3 corn tortillas on a skillet and add the 1 tsp of olive oil and 1/8 tsp of sea salt to both sides of each tortilla.
  5. While still on the skillet, place one scoop of feta cheese into each corn tortilla and cook until warm and melted.
  6. Place the corn tortillas on a plate. Then, add one scoop of black beans and on top add the corn, radish, and green onion.
  7. Serve hot, and enjoy!
