Corn Black Bean and Vegetable Tacos
|
Ingredients
- 1 cob corn organic
- 3 whole corn tortillas organic
- 1 cup black beans organic, cooked
- 1 whole green onions organic
- 1 whole radishes organic
- 2 tbsp feta cheese organic
- 1 tbsp olive oil organic
- 1 tsp cayenne pepper
- 1/8 tsp sea salt
- 4 cups water

Instructions
*Cooking times may vary.
- Place the 1 cob of corn and at least 4 cups of water into a large cooking pot. Heat the corn until the water boils, then remove it from the hot water.
- Use a knife and slice off the corn kernels and set aside.
- Rinse and slice the 1 whole radish into thin wafers. Mince the 1 whole green onion finely.
- Heat the 1 cup of black beans in a cooking pot on a medium heat for 5 minutes and add the 1 tsp of cayenne pepper. Then, warm both sides of the 3 corn tortillas on a skillet and add the 1 tsp of olive oil and 1/8 tsp of sea salt to both sides of each tortilla.
- While still on the skillet, place one scoop of feta cheese into each corn tortilla and cook until warm and melted.
- Place the corn tortillas on a plate. Then, add one scoop of black beans and on top add the corn, radish, and green onion.
- Serve hot, and enjoy!
