Ingredients
  • 2 cups basil leaves organic
  • 2 whole eggplants organic
  • 2 clove garlic organic
  • 1/2 cup parmesan cheese organic
  • 3 cups tomatoes organic, minced
  • 4 tbsp olive oil organic
  • 1 tsp black pepper

Instructions
*Cooking times may vary.
  1. Preheat the oven to 400 degrees Fahrenheit and grease a large glass baking tray.
  2. Slice the 2 whole eggplants into numerous circular shapes about a 1/4 inch thick. Chop finely the 2 cloves of garlic and 3 cups of tomatoes.
  3. Place the eggplant slices into the baking tray and place the tomatoes, 2 cups of basil leaves, garlic, 1 tsp of black pepper, and 4 tbsp of olive oil on top in that order.
  4. Bake all contents for 25 minutes, and enjoy!
