- Preheat the oven to 400 degrees Fahrenheit and grease a large glass baking tray.
- Slice the 2 whole eggplants into numerous circular shapes about a 1/4 inch thick. Chop finely the 2 cloves of garlic and 3 cups of tomatoes.
- Place the eggplant slices into the baking tray and place the tomatoes, 2 cups of basil leaves, garlic, 1 tsp of black pepper, and 4 tbsp of olive oil on top in that order.
- Bake all contents for 25 minutes, and enjoy!
