- Preheat a frying pan to a medium/high heat. Then, add the olive oil and sea salt.
- Crack the two eggs into a bowl and whisk until the yolks have completely mixed.
- Slice the 1 whole eggplant into strips or circles as desired. Then, dip each piece into the egg batter and immediately place into the frying pan.
- Cook both sides until light brown, and enjoy!
