Instructions
Preheat a frying pan to a medium/high heat. Then, add the olive oil and sea salt.
Crack the two eggs into a bowl and whisk until the yolks have completely mixed.
Slice the 1 whole eggplant into strips or circles as desired. Then, dip each piece into the egg batter and immediately place into the frying pan.
Cook both sides until light brown, and enjoy!
