  1. Add the 1/2 cup of dry basmati rice and 3/4 cup of water into a cooking pot and bring to a boil. Then, simmer with a lid for exactly 17 minutes.
  2. Meanwhile, chop the 1 clove of garlic and 1 tsp of ginger root finely. Chop the 2 cups of shiitake mushrooms.
  3. Add the 2 tbsp of olive oil, garlic, ginger, and shiitake mushrooms into a wok or large frying pan on a medium/high heat. Cook while stirring for 3 minutes. Then, add the basmati rice, 1 tbsp of lemon juice, and 1 tbsp of soy sauce. Cook and stir for another 5 minutes.
  4. Serve immediately while hot, and enjoy!
