Place the 1/2 cup of basmati rice and 3/4 cup of water into a cooking pot and bring to a boil. Then, cover with a lid and turn the heat down to low. Cook for exactly 17 minutes.
Chop the 2 leaves of iceberg lettuce and 1/2 cup of tomatoes finely and set aside.
Place the 1/2 cup of black beans into a cooking pot and heat for 3 minutes.
Using a frying pan on high heat, brown each side of the 1 whole corn tortilla. *You may salt and oil each side for extra flavor before frying.
Finally, place the corn tortilla down onto a plate followed by the black beans, basmati rice, iceberg lettuce, tomatoes, and 2 tbsp of lime juice. Enjoy!
